STUFFED PEPPER SOUP
12 GREEN PEPPERS
10 CANS DICE/STEWED TOMATOES
2 LBS GROUND BEEF OR LAMB
4 ONIONS
1 BULB GARLIC
2 EGGS (BEATEN)
1 CUP MILK
2 CUPS INSTANT RICE
1 CUP KETCHUP
1 TSP SALT
2 TSP PEPPER
3 TSP CINNAMON
10 TSP ALLSPICE
COUPLE DROPS HOT SAUCE
DICE PEPPERS, ONIONS, GARLIC. COMBINE MEAT, ONIONS, GARLIC, EGGS, 1/2 OF THE SEASONINGS AND ADD TO CROCKPOT. ADD PEPPERS -- AS MANY AS WILL FIT -- KEEP ADDING AS IT COOKS UNTIL IT'S ALL IN THE POT. COOK ON LOW OR HIGH FOR 5 - 7 HOURS OR UNTIL PEPPER SKINS ARE EXTREMELY TENDER.
WHEN DONE, PUT ALL CROCKPOT CONTENTS IN LARGE SOUP POT. ADD KETCHUP, TOMATOES, RICE, AND THE REST OF THE SEASONINGS. YOU CAN ADD SOME ONIONS AND GARLIC IF YOU LEAVE SOME OUT OF THE CROCKPOT, MAYBE 10% -- I DO, AND I LEAVE THE GARLIC AS THIN SLICES (LIKE IN GOODFELLAS) AND THE ONIONS AS THIN, MOON-LIKE SLIVERS. BRING TO BOIL, REDUCE AND SIMMER. YOU CAN ADD SOME WATER IF TOO THICK -- IT'S A FINE LINE TO GET THE RIGHT CONSISTENCY OF SOUP. YOU CAN ADD MORE KETCHUP TO TASTE (SOUNDS CRAZY, BUT IT WORKS!).
I CREATED THIS RECIPE AS A COPY OF A SOUP SERVED BY "WALLY'S" (AS SYRIAN AS IT GETS, RIGHT?) IN TOLEDO OFF HIGHWAY 20 AND TRACY ROAD WHILE VISITING DUANE. EAT, SLEEP, GOLF X 10 DAYS. I WAS UNDER-THE-WEATHER FROM ALL THE KIDS IN DAD'S BUILDING AND THEIR SNOTTY, SLOBBY, GERMY HANDS ON THE LOBBY DOOR, SO DUANE TOOK US TO WALLY'S RIGHT UP THE HIGHWAY (LIKE YOU CAN WALK ANYWHERE IN TOLEDO) FOR SOME COMFORT FOOD. MARY AND I BOTH ORDERED THIS SOUP AND WE'RE SO SATISFIED WE ASKED THE OWNER "DO YOU COOK THE STUFFED PEPPERS FIRST OR DO YOU JUST ADD ALL THE INGREDIENTS AS IS TO THE SOUP" AND HE SAID THEY JUST ADD THE PEPPERS TO THE SOUP. WE WENT THERE TWICE. I WOULD HAVE GONE MORE, BUT APPLEBEE'S AND BOB EVANS WERE ON CAROL'S LIST. BITCH!
WALLY'S WAS CLOSED THE NEXT SUMMER AND I TORE MY CHEST AND CURSED THE HEAVENS -- I LITERALLY COULDN'T LIVE WITHOUT THIS SOUP. IT TOOK A FEW TRIES, BUT I FINALLY GOT IT. SOOOO GOOD, I SERVED IT AS A FIRST COURSE DURING A DINNER WE HAD WHERE WE FOLLOWED IT WITH KIBBI AND GRAPE LEAVES, AND ALL THE FIXIN'S. PERFECTO!!! THIS SOUP WILL TAKE YOU BACK TO THE OLD COUNTRY. OR AT LEAST WALLY'S.
Don't even get me started on The Beirut. "Two minutes!!!"
